Poached Pears

  • 6 Bosc pears
  • 1 bottle dry red wine
  • 1 cup sugar
  • 1/2 cup orange juice
  • 1 tsp cinnamon
  • 1 orange peel
  • 1 cinnamon stick
  • 2 star anise
  1. Peel pears and cut bottom so pears will stand up. Leave stems in tact.
    Optional: cut in half and remove seeds.
  2. Mix all other ingredients in medium stock pot. Bring almost to a boil.
  3. When simmering, add pears.
  4. Cover and simmer pears in liquid for 15 – 20 minutes. Turn the pears every few minutes to ensure even color on all sides.
  5. When pears are fork tender, remove from liquid.
  6. Turn heat up to medium high and bring liquid to a boil.
  7. Boil for 10 – 15 minutes until liquid reduces by 1/3 and turns into a thick syrup.
  8. Serve pears with additional syrup and creme fraiche.
