{"id":1222,"date":"2018-10-08T16:19:40","date_gmt":"2018-10-08T20:19:40","guid":{"rendered":"https:\/\/www.cheflorious.com\/?post_type=recipe&#038;p=1222"},"modified":"2018-10-08T16:19:40","modified_gmt":"2018-10-08T20:19:40","slug":"four-bacon-pasta-carbonara","status":"publish","type":"portfolio","link":"https:\/\/everthemes.com\/wptest\/es\/portfolio\/four-bacon-pasta-carbonara\/","title":{"rendered":"Four-Bacon Pasta Carbonara"},"content":{"rendered":"<p><!--WPRM Recipe 9617--><\/p>\n<div class=\"wprm-fallback-recipe\">\n<h2 class=\"wprm-fallback-recipe-name\">Four-Bacon Pasta Carbonara<\/h2>\n<p>\t<img decoding=\"async\" class=\"wprm-fallback-recipe-image\" src=\"http:\/\/cheflorious.com\/staging\/3551\/wp-content\/uploads\/2018\/10\/Pasta-Carbonara-tnail-150x150.jpg\"\/>\t<\/p>\n<p class=\"wprm-fallback-recipe-summary\">\n<p>Nothing says &quot;I love you&quot; like carbs.\u00a0 At least that&#039;s my opinion!\u00a0 And there&#039;s nothing like a classic carbonara to make you feel warm inside and just plain &#039;ol content.\u00a0 Classic Pasta Carbonara is made with pancetta.\u00a0 Pancetta is an Italian style bacon that is not smoked like American style bacon.\u00a0 It is delicious and a wonderful accompaniment to pasta dishes and various appetizers.\u00a0 But y&#039;all know me!!\u00a0 When Carbonara meets Calibama, you get FOUR types of bacon.\u00a0 I loaded this dish up with thick cut bacon, pepper bacon, prosciutto and, of course, pancetta.\u00a0 The result is better than words can describe.\u00a0 I also added a lot of herbs and some sauteed mushrooms.\u00a0 The result was unbelievable and I have a new favorite dish.\u00a0 Hope you&#039;ll enjoy, and make this dish your own with your favorite bacon!!<\/p>\n<\/p>\n<div class=\"wprm-fallback-recipe-equipment\">\n\t\t\t<\/div>\n<div class=\"wprm-fallback-recipe-ingredients\">\n<ul>\n<li>1 lb spaghetti<\/li>\n<li>1 cup reserved pasta water<\/li>\n<li>4 slices pepper bacon<\/li>\n<li>4 slices thick cut bacon<\/li>\n<li>8 ozs prosciutto, cut up<\/li>\n<li>8 ozs pancetta, cooked in cubes<\/li>\n<li>1 cup baby bella mushrooms, sliced<\/li>\n<li>2 shallots, diced<\/li>\n<li>4 cloves garlic, chopped<\/li>\n<li>2 Tbsp freshly ground pepper<\/li>\n<li>1 Tbsp chopped rosemary<\/li>\n<li>1 tsp thyme leaves<\/li>\n<li>1 tsp chopped basil<\/li>\n<li>1 bunch fresh parsley<\/li>\n<li>5 eggs<\/li>\n<li>1 1\/4 cup grated Pecorino Romano cheese<\/li>\n<li>grated Parmesan cheese for top<\/li>\n<\/ul><\/div>\n<div class=\"wprm-fallback-recipe-instructions\">\n<ol>\n<li>Cook spaghetti in salted boiling water. Reserve 1 cup pasta water.<\/li>\n<li>Over medium-high heat cook all bacon. <\/li>\n<li>When bacon half done, add mushrooms, shallots and garlic.  <\/li>\n<li>Add rosemary, thyme, basil and 1 Tbsp of black pepper.  Cook until fragrant and mushrooms begin to turn light golden brown.  Remove from heat.  <\/li>\n<li>In a separate bowl, combine eggs, grated cheese and remaining Tbsp of black pepper.  Use a fork or whisk to combine well. <\/li>\n<li>Place cooked pasta directly in the pan with the cooked bacon mixture. Be sure pan is not on the heat. <\/li>\n<li>Add 1\/2 cup of reserved pasta water. <\/li>\n<li>Slowly pour in the egg, cheese and pepper blend, stirring constantly so the eggs do not scramble. <\/li>\n<li>Add fresh parsley and continue stirring. <\/li>\n<li>Stir until the cheese and egg mixture has incorporated the pasta water and forms a silky smooth sauce.
